Combine the rolled oats and fruit juice in a large bowl. Let it soak, covered, in the refrigerator overnight (6-8 hours).
In the morning
In a small bowl, coat the apple with lemon juice. This will help prevent the apple browning.
Add yoghurt to the pre-soaked oats and combine.
Mix in all other ingredients, including the apple-lemon mixture.
Add additional extras if desired (eg. coconut, cinnamon, vanilla, etc).
Enjoy for 3-4 days! Keep refrigerated.
Notes
This recipe can be adjusted to meet most dietary requirements. For example, swap the yoghurt for dairy-free coconut yoghurt, leave out the nuts and ensure to use gluten-free rolled oats.
If time sensitive, swap the rolled oats for quick oats and soak in fruit juice for 30 minutes instead.
