Easy Bircher Muesli Recipe: The Original Overnight Oats

Ingredients

  • 1 cup whole rolled oats
  • ½ cup 100% fruit juice or milk
  • 1 cup plain yoghurt
  • 1 apple diced finely
  • 1 tsp lemon juice
  • 1 banana sliced finely
  • 1 orange diced finely
  • ½ cup sultanas
  • ¼ cup nuts eg. crushed walnuts, flaked almonds
  • 2 tbsp honey

Instructions

The night before

  • Combine the rolled oats and fruit juice in a large bowl. Let it soak, covered, in the refrigerator overnight (6-8 hours).

In the morning

  • In a small bowl, coat the apple with lemon juice. This will help prevent the apple browning.
  • Add yoghurt to the pre-soaked oats and combine.
  • Mix in all other ingredients, including the apple-lemon mixture.
  • Add additional extras if desired (eg. coconut, cinnamon, vanilla, etc).
  • Enjoy for 3-4 days! Keep refrigerated.

Notes

  • This recipe can be adjusted to meet most dietary requirements. For example, swap the yoghurt for dairy-free coconut yoghurt, leave out the nuts and ensure to use gluten-free rolled oats. 
  • If time sensitive, swap the rolled oats for quick oats and soak in fruit juice for 30 minutes instead.
